cost per person: EUR 2, 20

time: 15 min

tools:

1 cutting board

1 stick blender + mixing cup
1 knife
1 sieve (fine)
1 spatula (silicone)
1 peeler or small knife
2 glass bowls

   tea spoons

ingredients for two:

200 g   red radish (without leaves)
  80 g   cherry flesh (appr. 16 cherries)
  60 g   sour cream
  10 g   lemon balm (fresh)

  30 ml oil

decoration:

    2 small radishes (without leaves)
    3 cherries

    sour cream
    lemon balm (fresh)

Preparing radish for decoration: cut off cap, carve out flesh with a peeler or small knife, fill with ash covered goat cheese and place the cap on top.

And here's how it works ...

  • Cut off the caps of two radishes, carve out the flesh, fill with ash covered goat cheese - store at cool temperature.
  • Cube 200 g of radish, halve all of the cherries and loosen from the stone carefully - put six cherry halves aside for decoration.
  • Finely blend cubed radish, the rest of the cherry halves and 60 g of sour cream - season with sugar and a little salt.
  • Pass cherry-radish smoothie through a fine sieve using a spatula.
  • Finely blend 10 g of lemon balm with 30 ml of oil - set aside in a bowl.
  • Pour cherry-radish smoothie into bowls, place goat cheese filled radishes in the center.
  • Fill six cherry halves with sour cream and carefully arrange them in the bowl carlly.
  • Decorate smoothie with lemon balm oil and fresh lemon balm.
