FRESH: Strawberry in Love (en)

What do strawberries dream of?

Just ripened to full maturity, the fresh young Strawberry is waiting for nothing more than for her true love to come along ... and she already has someone in mind whom she could imagine spending her whole life with, the charismatic Marjoram, son of Oregano. All day, she thinks of his tart, aromatic fragrance and fantasizes about life with him by her side. Even at night, when she lies down in her warm, wild honey-scented bed and covers up in a breath of velvety milk and sweet roses, she imagines holding her beloved close as she drifts off.

The creamy softness of fried semolina porridge, the golden sweetness of wild honey, the smooth milkiness of white chocolate and the comforting perfume of roses ... there's nothing more the plump young Strawberry could wish for to fall asleep peacefully. But only her Marjoram's strong, spicy aroma makes her dream.

1 mixing bowl

1 rectangular mold or Tupperware
   plastic wrap
   soup spoons
   tea spoons


ingredients for two:


    4 fresh strawberries
    1 dried rose (rose tea)
    2 marjoram stems

  80 g   baby porridge semolina
  75 g   white chocolate
  10 g   wild honey
  15 g   butter
200 ml  milk 
  60 ml  whipping cream

            rose tea
            marjoram leaves
            







Melt white chocolate in bain marie, add rose tea ...


... whip cream until soft peaks form...


... carefully fold in white chocolate.


And here's how it works ...

  • Bring milk to a boil and remove from heat.
  • Add marjoram stems, wild honey, and 50 g white chocolate, stir until smooth - put aside for five minutes.
  • In the meantime, cover the inside of the rectangular mold with plastic wrap.
  • Reheat milk until it starts steaming and stir in baby porridge semolina using a whisk.
  • Fill the finished baby porridge into the rectangular mold and press - put into the freezer.
  • Melt white chocolate in a bowl placed in a pot with warm water.
  • Crush one dried rosebud between your fingers, remove stem and stir into the white chocolate.
  • Slightly whip cream in a mixing bowl using a whisk until soft peaks form (refer to pictures above).
  • Carefully fold the melted white chocolate into the whipped cream - put aside at room temperature.
  • As soon as it is cold, take the solid semolina porridge out of the mold and cut it into rectangular pieces using a clean, wet knife.
  • Melt butter in a pan on medium heat and fry the semolina pieces slowly on the top and bottom sides until golden brown - drip off on a paper towel - arrange on plates.
  • Finely slice strawberries and lay them on the semolina pieces.
  • With a spoon, carefully arrange the white chocolate-cream mixture on top and decorate with crushed rosebud tea and marjoram leaves.
